Healthy Plantain Pancakes


 When I was a little boy I used to love Pancakes the texture it's amazing I used to make it by myself it didn't matter the size of it on a pan I used to flip it like a pro no mess around actually one day I made one so big that my father said to me you wont be able to flip it properly it's too big it will fall apart, well he was right. Lol just kidding I flipped it like always with no mess my passion for the pancakes used to be so huge then I realized that I wasn't a kid anymore the white flour the amount of carbohydrates it wasn't a good a idea to eat if I want to look on shape. 


Then I heard a healthier recipe Plantain Pancakes I said how come it could be possible? I tried the result it was a new fantastic taste without regrets you could use your imagination if you'd like to improve the flavor or nutrition facts I know a friend who adds protein powder nut the original recipe it's this one. 




Ingredients:

2 ripe plant
ains(really ripe it will taste better)




1 spoon of olive oil.
2 eggs
4 tablespoon oatmeal flour or almond flour.
1/2 scoop protein powder, optional
Pinch of sea salt

Pinch of cinnamon powder

 


Directions:


Peel the plantains and cut them into large chunks. Load all the ingredients into a food processor or a blender. Run the processor or blender  until all the ingredients are smooth and a batter has formed.


Heat a large skillet pan over medium-low heat. Add about 1 heaping teaspoon of olive  oil. Form pancakes using about 3 Tablespoons of batter. Cook approximately 3 minutes on each side or until each side is golden brown. Repeat until all the batter is gone.

Serve with fresh berries and a side of eggs or any other side like fish or chicken it's about trying to get the perfect combination for a complete breakfast.
